Calamari Salad

Ingredients for 4 persons:

500g squid, 1 zucchini, 1 bell pepper, orange, 10 cherry tomatoes, 200g lettuce, 1dcl white wine, lemon juice, olive oil, vinegar, garlic, salt, pepper 

Preparation:

Clean the squid and cook them whole in salted water. Once cooked, cool them in ice water, slice them, and marinate them in a mixture of white wine, lemon juice, olive oil, minced garlic, salt, and pepper.

Slice the zucchini and bell peppers, then roast them until tender.

Wash, chop, and season the lettuce with olive oil and vinegar. 

Assemble the salad: Begin by placing a bed of seasoned lettuce on the serving plate. Then arrange the roasted bell peppers and zucchini slices on top. Add halved cherry tomatoes, thin slices of orange carpaccio, and the marinated calamari.
