Sardines in tomato sauce
For 2 persons:
40 dag of sardines,
2 onions,
2 tablespoons of tomato paste,
a larger carrot,
a small leek,
1 dl of dry white wine (Malvasia),
olive oil,
and spices.
Clean the sardines, remove their heads and central bone. Then, halve them, season with salt, coat with flour, and fry them until crispy in a small amount of oil. Keep them warm. Chop the onions and sauté them in two tablespoons of oil until they turn golden. Then, add the tomato paste, grated carrot, and sliced leek. Season with salt, pepper, add wine and a little water, a sprig of rosemary, and simmer covered for 20 minutes. Add the sardines, bring to a boil without stirring, and serve with bread or polenta.
